cookin'.....

So this may surprise a lot of girls out there that cook for their husbands but I think I can count how many times in the last year I have cooked for Travis on one hand. hahaha. I know I know pretty pathetic. I have always hated cooking (or the cleaning up part?) and hated the idea of being the girl who has to have dinner on the table when her husband gets home, probably because I grew up in a house where both of my parents cooked all of the time and my dad is an AMAZING cook. Lately though, I think my ideas about "having dinner on the table by 5" have changed. I actually feel like it makes you a more nurturing wife and overall better person to do something nice like cooking dinner every once in a while for your husband. I have the urge to do more for Travis (since he does a ton for me and since he has never complained about the lack of cooking on my part). I am actually excited to do more "domestic" things. Weird. So if anyone knows any easy awesome recipes let me know and I will love you forever!!!

tip: my crockpot=my best friend. seriously, you can cook so many yummy yummy things by dumping cans of whatever the heck you have in the crockpot and forgetting about it until the wonderful aroma fills up your apartment. one of my personal favorites: salsa chicken.

all you need is your favorite salsa and two frozen chicken breasts. dump enough salsa to totally cover the chicken (probably about 3 or cups...a lot, i know). then set the crock pot to HIGH (so it will cook for about 4 hours...you can also do it on low if you want to do it before you go to work or something). about 30 minutes before it's supposed to be done pull the chicken apart with a fork and knife. it will literally fall apart!

if you want to spice it up really yummy, use fresh cilantro.

use the salsa chicken for yummy tacos, taco salad, burritos...or as a main meat dish with white rice and black beans. seriously yummy.

Start your rice first-

I use chicken breasts, but my mom always used dark and light meat, because it's cheaper.

So--defrost your chicken.
Put in pan. If you're only making 3-4 pieces-then a small pan is best. You want to cram them together. Salt and Pepper. Put Garlic powder like a Tablespoon on each breast-flip repeat. Then About a 1/2 cup of brown sugar rubbed into the chicken. Add a few TB of water. Bake 350 for 30 minutes if it's breasts...45 if it's legs and such. So yummy. plus there's sauce for the rice.

oh my goodness girl! I was QUITE shocked to read that!! I love cooking. I HATE cooking for a long period of time or cooking hard things but i like to make dinners and im the QUEEN of easy or nothing at all kinda dinners. Give me your email address and ill send you a million recipes that we use. I cook at least 3 times a week and try not to do the same recipe in the same month. now IM wierd!! so I have quite a few recipes to hand over to you!!
